Baby spinach salad with Sweet Balsamic Reduction marinated BBQ king prawns
Ingredients:
300 g of king prawns with shell
50 ml of virgin cold press olive oil
2 g of fresh oregano leaves
1 g of crushed rock salt
10 ml of Sweet Balsamic Reduction (SBR)
1/2 red onion
350 g of baby spinach
250 g of 1/2 chopped cherry tomatoes
30g of freshly roasted pine nuts
Cooking instructions
Cook king prawns on BBQ until the outer shell is lightly charred. Remove shell & place into a mixing bowl with 50ml of Virgin cold press olive oil, finely chopped oregano leaf, sliced red onions, crushed sea salt, 10 ml of SBR & mix gently. Place into fridge for 30 mins for the flavors to fuse together.
Serving instructions
Gently toss the marinated king prawns through the baby spinach and sprinkle the 1/2 chopped cherry tomatoes & roasted pine nuts.
